200 g spelt flour (preferably type 630)
100 g natural yogurt (thick, e.g. Greek 2%)
1 egg
1 tablespoon erythritol or xylitol
1 teaspoon baking powder
1 tablespoon coconut oil (or clarified butter)
150 g blueberries (fresh or frozen)
1 teaspoon cornstarch (for blueberries)
1️⃣ In a bowl, mix flour, baking powder, erythritol, yogurt, egg, and oil - knead into a smooth dough.
2️⃣ Mix blueberries with cornstarch (to prevent juice leakage).
3️⃣ Divide the dough into 8 parts, flatten, add a teaspoon of blueberries, seal the edges, and shape into buns.
4️⃣ Arrange on a baking sheet and bake 20-25 min at 180°C (top-bottom).
