Zucchini spaghetti with salmon in creamy avocado sauce

Ingredients:

  • 300 g salmon (fresh or smoked)

  • 1 medium zucchini (approx. 300 g)

  • 1 ripe avocado

  • 200 g mushrooms (e.g. button or shiitake)

  • 3 tbsp natural yogurt

  • juice of 1 lime

  • ⅓ onion

  • 1 clove of garlic

  • handful of parsley

  • ½ tsp sea salt

  • ½ tsp black pepper

 

Preparation:

 

Salmon and mushrooms:

  • Heat a non-stick pan.
  • Grill the salmon and mushrooms (sliced) for 5-7 minutes on each side until browned.

 

Zucchini spaghetti:

  • Grate the zucchini on a special vegetable grater or cut into thin strips.

 

Avocado sauce:

  • In a blender, mix avocado, yogurt, lime juice, garlic, onion, salt, pepper, and parsley until smooth.

 

Serving:

  • Mix the zucchini with the avocado sauce.
  • Place on top of grilled salmon and mushrooms.

  • Sprinkle with fresh parsley.
