300 g salmon (fresh or smoked)
1 medium zucchini (approx. 300 g)
1 ripe avocado
200 g mushrooms (e.g. button or shiitake)
3 tbsp natural yogurt
juice of 1 lime
⅓ onion
1 clove of garlic
handful of parsley
½ tsp sea salt
½ tsp black pepper
Salmon and mushrooms:
Grill the salmon and mushrooms (sliced) for 5-7 minutes on each side until browned.
Zucchini spaghetti:
Grate the zucchini on a special vegetable grater or cut into thin strips.
Avocado sauce:
In a blender, mix avocado, yogurt, lime juice, garlic, onion, salt, pepper, and parsley until smooth.
Serving:
Place on top of grilled salmon and mushrooms.
Sprinkle with fresh parsley.
