Ingredients (4 servings)
Meat: 500 g turkey tenderloin
15 ml olive oil
½ teaspoon salt
1 teaspoon curry powder
Sauce: 200 ml light coconut milk
250 ml tomato passata (or canned tomatoes)
1 heaping teaspoon red curry paste
1 teaspoon curry powder
⅔ teaspoon turmeric
⅔ teaspoon cinnamon
½ teaspoon lemongrass (or 2 tablespoons lemon juice)
½ teaspoon granulated garlic (or 1 clove fresh)
⅓ teaspoon salt
100 ml water
Additions:
1 teaspoon fresh ginger (pressed or finely chopped)
Fresh cilantro or spinach
Optional: fresh vegetables (bell pepper, carrot)
Preparation:
1️⃣ Cut the turkey into small cubes or strips, marinate in olive oil, salt, and curry.
