Banalically Simple Carrot Fit Muffins

 

Nutritional values per 1 muffin:

Calories: 120 kcal

Carbohydrates: 21 g

Protein: 3 g

Fat: 4 g

Fiber: 3 g

 

Ingredients (for 9 muffins):

  • 150 g spelt flour

  • 2 carrots (grated)

  • 150 g applesauce

  • 50 g xylitol (or erythritol)

  • 1 teaspoon cinnamon

  • 1 teaspoon baking powder

  • 1 tablespoon coconut oil

  • 100 ml water

 

Quick preparation:

 

1️⃣ Mix all ingredients in a bowl.

2️⃣ Transfer the mixture to muffin molds.

3️⃣ Bake 25 minutes at 190°C.

 

And it's ready! No complicated ingredients, just great taste!
